When I was a child, I did NOT like vegetables. As I got older I learned the importance of eating vegetables even if I didn't like them. I would force myself to eat the vegetables (without them touching the rest of my food) and then I would eat something I liked usually followed by something sweet.
Now I enjoy vegetables, I look for a variety of colors on my plate, and I usually have them as part of every meal sometimes with a little dark chocolate in between. How did I go from dislike to desire? I started blending vegetables into fruit, popsicles, and sauces when my oldest daughter was young because she absolutely refused to eat vegetables. She didn't even like green beans, which were the only vegetable I liked as a child.
After graduate school where I studied a ridiculous number of personality assessments, I wanted to come up with a personality style related to vegetables. I looked at the colors, shapes, and the way they grew and came up with the Green Bean, Orange Pepper, Red Tomato, and Purple Carrot. To my surprise the colors were the basic vegetable colors and fit perfectly with the vegetable styles. How fun! I studied colors and vegetables and could feel the colors: warm or cool, calm or lively. I learned about all of the wonderful things vegetables do for my body. I was hooked on vegetables! I like most of them raw or only slightly cooked, but I learned from the Carrot Museum website that cooking brings out the beta-carotene in carrots and blending also releases this important nutrient. The best advice is to eat your vegetables cooked or raw––just be sure to eat them and enjoy!
