I must confess that my first love is chocolate rather than vegetables. I make a conscious effort to eat vegetables with just about every meal. I add vegetables to sauces and desserts (often blended). I look at my plate to make sure it has enough color (in vegetables). I often grab more vegetables from the refrigerator if I find that I am short on color.
A healthy lifestyle includes eating more fruit and vegetables than sugar and starch. Some people naturally head for the veggies but others, like myself, learned the value of vegetables and learned how to start eating them regularly.
I wrote the book, Vegetable Kids in the Garden, to promote healthy eating and fresh vegetables for children and adults. Reading about vegetables and writing a fun book about the garden reminded me daily of the value of fresh vegetables––best from the garden, fresh from the Farmer’s Market or from the fresh produce section (fill in with frozen or canned when needed). Have fun with vegetables!
